Tujuan dari penelitian ini untuk mengetahui kadar antioksidan sirup dari ekstrak ubi jalar kuning (Ipomoea batatas L), menentukan karakteristik sirup yang meliputi kadar betakaroten, homogenitas, kadar gula, kadar air, mengetahui tingkat keawetan sirup, dan mengetahui tingkat kesukaan masyarakat. Selain itu, mengetahui perbedaan sirup ubi jalar kuning dengan pengukusan dan tanpa pengukusan yang meliputi kadar antioksidan, betakaroten, homogenitas, kadar gula, dan kadar air.<\/span><\/p>\n<p><span lang=\"SV\" style=\"font-family: &quot;Times New Roman&quot;,&quot;serif&quot;; font-size: 12pt;\">Metode yang digunakan dalam penelitian ini meliputi tiga tahap, yaitu pembuatan sirup dari ekstrak ubi jalar kuning, pengujian sirup ubi jalar kuning di laboraturium, dan pengujian organoleptik terhadap khalayak terbatas. Pengujian sirup ubi jalar kuning dilakukan dengan menggunakan dua formula yaitu dengan cara dikukus dan tidak dikukus. Formula tersebut digunakan sebagai pembanding untuk mendapatkan kadar antioksidan dan betakaroten yang terbaik.<\/span><\/p>\n<p><span lang=\"SV\" style=\"font-family: &quot;Times New Roman&quot;,&quot;serif&quot;; font-size: 12pt;\">Hasil penelitian di laboratorium didapat sirup dengan formula dikukus, kadar air 54,4491%, &nbsp;kadar gula 44,9082%, kadar antioksidan 13,6570%, kadar betakaroten 114.7507%. Sirup dengan formula tidak dikukus, kadar air yaitu 54,6786%, kadar gula 44,3593%, kadar antioksidan 57,6679% kadar betakaroten 425,1847%.
